Easy Morning Oatmeal

I don’t know about y’all but my mornings are normally a little crazy! I used to run out the door with a banana and a cup of coffee, but when I was ready for lunch around 10:30 a.m. I decided that wasn’t going to cut it anymore. So, I resolved to waking up a little earlier and taking the time to make a good, healthy breakfast.

This is a go to recipe of mine. I eat oatmeal almost every morning for breakfast!

It’s so easy, it keeps you full, and tastes absolutely delicious!

Easy Morning Oatmeal

Ingredients:
1cup Oats
1 3/4 cup Unsweetened Coconut Milk
1/2 tsp Cinnamon
Dash of Salt
A few drops of Vanilla

Top with:
Fresh fruit (Blueberries, Bananas, Strawberries)
Unsweetened Coconut
Brown Sugar (Just a sprinkle)
Granola (Optional)
Low Fat Vanilla Yogurt (Optional – Just a tad on top)

Directions:
You can make this in the microwave or on the stove. I’m normally running tight on time so I opt for the microwave during the week. Put all of your ingredients in a microwave safe bowl (I normally use a large pyrex measuring cup). Note: the oatmeal will boil over so be sure to use a dish that leaves enough room for it to expand!

Microwave for 2 minutes and then remove and stir. Microwave for 2 additional minutes (keeping an eye on it to make sure it doesn’t bubble over).

Remove and let cool for 2 minutes.

Serve with all of your favorite toppings!
